    • 1 tablespoon oil from sun-dried tomatoes jar
    • 2 tablespoons unsalted butter
    • 1 large shallot (chopped (about 1/2 cup))
    • 4 oz. sun-dried tomatoes in oil (rinsed, chopped into strips (1 heaping cup))
    • 4 garlic cloves (minced)
    • 1/4 teaspoon red pepper flakes
    • 3 tablespoons all-purpose flour
    • 1 1/2 cups low sodium chicken broth
    • 1 cup milk
    • 1/2 cup heavy cream
    • 2 teaspoons chicken bouillon
    • 1 teaspoon dried basil
    • 1/2 tsp EACH dried oregano, dried parsley
    • 1/4 tsp EACH salt, pepper
    • 3/4 cup freshly grated Parmesan cheese
    • 1/3 cup shredded mozzarella cheese
    • 2 cups roughly chopped spinach (optional)
